Here, Vogue Australia shares an exclusive extract from The Clean Plate: Delicious, Healthy Recipes for Everyday Glow by Gwyneth Paltrow for hen and zucchini kefta.

Chicken and zucchini kefta

Serves two
Packed with flavour and recent components, these hen kebabs really feel like the other of a sacrifice, and are a summer time BBQ staple. If skewering seems like an excessive amount of work, type these into little meatballs or burgers as an alternative. And don’t skip the tahini sauce—it actually ties every part collectively.

For the kebabs:
1 medium zucchini, grated
1½ teaspoons kosher salt
1 pound floor darkish meat hen

⅓ cup chopped recent mint
three garlic cloves, finely chopped
2 tablespoons very finely chopped recent ginger
1 teaspoon floor cumin

2 tablespoons tahini
Olive oil

Tahini dressing:
Makes about ½ cup

¼ cup tahini
¼ cup water
2 garlic cloves
Grated juice of ½ lemon
1 tablespoon apple cider vinegar
2 small shallots
Minced ¼ teaspoon kosher salt

In a small bowl, whisk the tahini briefly to loosen it.
